Monday Musings


Since it is Monday, I thought I would share with you
one of my mainstays that at Christmas time I fix.
It is called Mint Cake and I have seen lots of variations
on it and I have tried them, and this recipe is my favorite.
Just for the flavor. My note care that it is written on
is worn out and tattered but it is so worth the work.

Mint Cake

(not my picture)
1/2 cup sugar
1/2 cup butter
4 eggs
1 16 oz can of Hershey's syrup
1 tsp vanilla
1/2 teaspoon salt
1 cup flour

Combine in order-beat-pour into greased and
floured jelly roll pan.
Bake 15 to 20 minutes at 350 degrees
Cool completely

Filling
2 cups powdered sugar
1/2 cup butter
2 Tablespoons milk
1/2 teaspoon peppermint extract
dash of green food coloring

Beat and spread over cooled cake.
Refrigerate until firm

Icing
I use a bag of semi-sweet chocolate chips
1 cube of butter
Melt butter, add chocolate chips and mix until chocolate chips
are melted and smooth.
Spoon on cake and refrigerate until firm.

Take out and let set at room temperature before cutting.


The first time I had this I was at a home school meeting with my group.
I didn't normally eat desert but that night this looked really yummy.
So I had one piece. Then another, and another, and I just couldn't stop
eating it. I got the recipe and I fix it only at Christmas time. It is my husbands
favorite but he doesn't eat a lot of sweets so once a year is good.
It makes a lot and it freezes well.

Sigh, looks like I miss the mint cake this year. At least I have the recipe now in my clutches, so I can make it later. :-)

Yeah, it saves me from having to write it out on a card. :) I am so glad you both have it. Now you can eat the whole pan at your houses, instead of me eating it at my house. :) It does freeze so well too. It tastes really good in February.:)

Oh my that looks so good. I am hungry here at 11:00 and craving mint cake :) Looks so pretty too.

Mmmmmm. That sounds heavenly. And home school group? We homeschool, too, though we're still closer to the beginning of the journey with my oldest being only 12.

Looks really yummy. I have been looking for a good recipe to take to a cookie/square exchange later this month.
But what the heck is a jelly roll pan? I have seen this on several recipes lately. My grandma used to make jelly roll but didn't have a special pan. I think she used a cookie sheet. Help me....

Oh my does this EVER sound good to this CHOCOLATE loving gal over here...I am almost afraid to make it as I know whose head would eat the most, haha...but I am afraid I am going to have to try though...Have a wonderful day. HUGS

Kim: I just googled jelly roll pan, and it's a cookie sheet with raised edges. And here for years I've just called them cookie sheets. :-)

Oh I will have to pass this one to my daughter..the first thing she wanted after we got our tree was a Starbucks and their mint brownie...she felt Christmas had begun..she will love this!!

Thanks Kessie. Gee apparently I have several jelly roll pans and didn't know it! LOL
And now I don't have to go out and buy one.
