Broccoli Salad

This is a picture of Broccoli Salad. I love this stuff.
but today when I added up the points for it I about
died. It was 89 points.You could eat a whole cake I
think and it would not be 89 points.
I don't eat it very often because I knew that it
must be dangerous, it tastes dangerous.

I got a new cookbook for my birthday and the lady
who wrote the cook book catered my daughters wedding
so I knew how good this is . I was so excited to see it in her
cook book.

I love the name of her cookbook. So here is the
recipe.
Broccoli Salad
Ingredients:
4 bunches broccoli
(cut into bite size pieces)

1 cup chopped red onion
1 cup raisins
1 cup dry roasted sunflower seeds
1 cup crumbled cooked bacon

Dressing:
1 cup mayonnaise
1/3 cup sugar
2 Tbsp white vinegar
if your salad seems dry double the dressing
to add more.
Instructions:
1. In a large bowl stir together all ingredients for the salad.
2. Mix together dressing ingredients.
3. Toss salad with dressing.

So now I want to make it without all of the points,
so I am using fat free mayonnaise and 1/2 cup of raisins
and 1/2 cup sunflower seeds and just a bit of the bacon.
If someone has some ideas to make it less fatening
I would appreciate some ideas. I could eat this for lunch
every day, if I wasn't so afraid of it.

The one my mom gets at Costco has cashews, rather than sunflower seeds. Are those any less fattening? I'm so glad you posted the recipe. Now I can make it myself!

When we had Kessie" wedding, everyone who ate that salad said it was the same one your Mom buys. So I think that is what is so neat about it. I think that is a idea about cashews. I love those too.
I was so surprised to see that it only had 3 ingredients for the dressing. I can't wait for you to look through this cookbook. We will have to have some cooking days and just do recipes from this. They all sound so good.

89 points?? Did you factor in a whole jar of mayonnaise or something??

And besides, it has broccoli in it. That should cancel out a bunch of points right there, being vegetables.

I can tell you never have to worry about weight. :) That would be if you ate the whole thing, which as much as I love it, I think I could do that. I think I could eat it at every meal.

Oh that looks good! I think I will try to make your safe version. Do you think it would work with Splenda instead of sugar? That might help save a few points.

bummer! it just doesn't seem right
that a broccoli anything could have
as many points as a cake.
