Doughnuts

I made donuts yesterday, and no I didn't eat any.
If I was going to blow my commitment it wouldn't be with
donuts. At Christmas, my son bought a doughnut pan for me.
The boys have been asking for them as my first batch I made
was a Spice Cake Doughnut recipe.

This is my doughnut pan. I am still getting down pouring the
batter in and not making a mess and learning how much to
pour in so you get a decent sized doughnut.

Spiced Cake Donuts
2 cups All-purpose flour
3/4 cup white sugar
2 tsp baking powder
1/4 tsp ground nutmeg
1/4 tsp cinnamon
1 tsp salt
3/4 cup milk
2 eggs, beaten
2 tsp vanilla extract
1 Tbsp shortening

Glaze 1 cup confectioners sugar
2 Tbsp HOT water

Directions:
Preheat oven to 325 F
Lightly grease the doughnut pan.
In a large bowl, mix flour, sugar, baking powder,
nutmeg, cinnamon, and salt.
Stir in milk, eggs, vanilla, and shortening.
Beat together until well blended.
Fill each doughnut cup approximately 3/4 full.
Bake 8-10 minutes in preheated oven, until doughnuts
spring back when touched. Allow to cool slightly before removing
from pan.
To make glaze, blend confectioners sugar and hot water in a
small bowl. Dip doughnuts in the glaze when serving.
Yields 12 doughnuts.

I also used a cake mix and made a batch
of chocolate ones. The photographer didn't get a good picture of
them. So I had batter left so I made cupcakes too.

I thought they turned out pretty good for something that was
leftover.
When I make doughnuts the regular way I always feel so guilty about
the fried in oil part so this isn't so bad I guess. I don't go buy
doughnuts unless it is someones birthday, so my son who has
the next birthday said he likes these better than the store
bought kind. He said, they don't make you feel sick. I thought
that was a pretty good recommendation.
I hope you have a lovely Friday, so glad it is Friday too,
I really do hope it is a slower paced one than this week has been.
I need to clean my chicken coops and wash the dog. :)

Ooooh a donut pan! What a great idea! I've never made donuts just because of the frying-in-fat-and-making-a-mess part.

Ohhh, Donuts!! One of my (many) weaknesses. The pan looks kind of neat. I have a family friend who makes me donuts every once in awhile - the deep fried ones. So good that I hide them!

Oh convicted now...this is what my son would love in the morning for his teenage boy sleep over...fresh donuts...wow!! I will be writing down this recipe!
So are the donuts a cake like donut? Not yeast where they need to rise? Can you tell I don't have a clue...my mother made the yeast rising ones years ago....like 35 years ago...LOL

We love doughnuts...I may have to get one of those pans! Yours look perfect and the cupcakes are pretty, too! Cleaning out chicken coops...now that sounds like fun!! :-) I'm kind of under the weather today, so I'm doing laundry and watching HGTV! I don't plan to leave the house...it's cold outside!Enjoy your weekend, friend!

Those were some really tasty donuts, too. And it's true, they don't make you feel sick, any more than eating a slice of cake makes you feel sick. I don't know what it is about fried donuts, but they make me sick every time.

Oh I love fresh donuts fried in oil but I never make them anymore because of all the calories and not to mentioned, oil. These looks good but I don't have a donut pan. Boo-Hoo...JB

Oh my goodness my boys would have LOVED these...still would I guess now that I think of it. I have never seen a donut pan. What a good idea. And you know, reg. donuts ALWAYS make me sick so I advoid them altogether, but these I am quite certain I could eat ~ not that I will be any time soon, but this looks wonderful...and yes Janette almost a must for teenage boy sleepover, haha...I am impressed btw Kim that you could have both donuts and cupcakes in your house that YOU made and NOT eat any. Don't think I could have done it. What a good mama you are! Though the diet is getting much easier I noticed the last couple of days to stick to. Have a wonderful week-end. HUGS

I never knew you could make donuts without frying them. The recipe sounds easy and delicious. These would be wonderful on special occasions like birthdays or holidays.

Donuts? Yikes. I'm cutting out all desserts and candy right now. I'm recovering from the attack of Christmas cookies. Hope your family enjoyed them. I'll write soon.
Oh- has anybody heard from "One Animal Away from Divorce"? I sure hope she's okay!
