Today we were supposed to have rain and wind.
I was ready to stay in the house and be warm and cozy.
We had clouds but no rain and no wind. I opened all
the windows and put on a short sleeved shirt and
pretended I was cold.
I wanted to fix Clam Chowder so I did anyway.
I wanted to share my recipe with you on this Monday.
My Best Clam Chowder
3 cans minced clams
1 cup minced onion
1 cup diced celery
2 cups diced potatoes
1 cup diced carrots
3/4 cup butter
3/4 cup butter
1 qt half&half
2 Tablespoons red wine vinegar
1 1/2 teaspoons salt
ground pepper to taste
diced bacon if desired
Serve in bread bowls
1. Put diced vegetables in large skillet. Drain juice from clams into skillet.
Add enough water to cover cook over medium heat until tender.
2. Meanwhile in large heavy saucepan melt butter over medium heat.
Wisk flour until smooth, wisk in cream and stir constantly until smooth.
3. After vegetables are tender, add all to the to cream in sauce pan.
Do not boil.
4. Stir in clams just before serving. When clams are heated through stir in
vinegar and salt and pepper.
The vinegar is the magic ingredient. I had never made anything like this
and it makes the clam chowder the best I have ever eaten.
This is what I serve on Christmas Eve I feed a bunch on Christmas
Eve so I just triple it and it always turns out very nice. Serving
it in bread bowls just makes it festive.

Yumm, I love clam chowder. My secret ingredient is Velveeta cheese. It melts in and adds a little zip. It really is much better than it sounds!
I love cam chowder too and one day when I didn't had enough milk to put in and not enough time to get some, I added a can of Campbell Cream of Mushroom soup to the mix and decided to add finely diced carrots to it and everyone just loved it. Now they want the soup in it so I guess my secret ingredient is Campbell Cream of Mushroom. I tried some other brand bur it has to be Campbell.

Well, it rained pretty good last night, and we're having wind today. I looked at the weather radar and it looks like the bulk of the storm is past us and snowing like fury in the mountains.
A good day for soup anyway! I don't have clams, but I've been thinking about beef stew ...
Did you feel the earthquake? It was 4 something and happened at 6:37, it always make the house do the weirdest things. It was centered in Maricopa.

Earthquakes? Yikes! We actually had one about seven years ago, which is really weird for the East Coast. I yelled at the kids and told them they were being too rowdy and the house was shaking. We still joke about that. It was a little quake. I was sure it was one of my daughters jumping up and down! Motherhood doesn't come with a manual. That's what the little tummy bulge most of us have is- the manual!

You know, I did hear a weird sound about that time this morning. Like a weird truck driving by, except the sound just grew and then faded. If the bed shook at all, I probably just sleepily thought it was the hubby.
I have a friend who grew up on the coast of NC. She LOVES clam chowder,but of course, she likes it made with fresh clams. I wonder what she would think of this.Maybe I will give it a try and invite her over! My husband prefers crab to clams. Do you think it would work with crab meat?

My husband always wants to sample clam chowder in every restaurant he goes to. It's his favorite soup. He's kind of on a quest to find the best ever. I've never made it myself (except the ready made kind you heat up), but I think I'd like to try, and your recipe doesn't sound too hard :-)
