Today on Tuesday

My flowerbeds are so full of flowers. I was able to keep my black eyed Susan's from my daughter. She isn't a fan of black eyed Susan's and now that the wedding is so close, they get to stay. I am so relieved. She has her hands so full right now. These next two weeks are going to be crazy. My daughter and her family will be back next week. We have company coming to stay this weekend. My son and my soon to be son in law and the rest of the groomsmen are driving to New Mexico leaving on Friday to go hunt that treasure. You know the one that all of the hoopla is about.
They are going camping and then hunting treasure. For three days. Am I happy about it? Nope. Can I do anything about it? Nope. So I have to keep my trap shut. My husband very quietly reminds me when no one can hear him of the hair brained things he did at that age. One of them being strapped to a ridged winged hang glider.


I don't share recipes very often. Just because I just hate typing them out and because I can't ever leave a recipe alone. I always have to change it. The reason I want to share this one is it is my current recipe that is I can use for so many different things. I put it in salad or burritos or tacos. Right now, I am so busy I need food that I can grab and make something hot and life still seems normal.


South Western Chicken 

2 cans (15 1/4 oz) corn, drained
1 can ( 15 oz) black beans, rinsed and drained
1 jar (16 oz) chunky salsa
6 boneless, skinless chicken breast halves
1 c. low-fat shredded Cheddar cheese.

1. Combine corn, beans and 1/2 cup of the salsa in slow cooker.

2. Top with chicken, pour remaining salsa over chicken.

3. Cover cook on low 7-8 hours

4 Sprinkle with cheese, Cover, let melt for five minutes.

What I do different.
Into the salsa that you are supposed to pour over the chicken, I mix garlic, minced onion, chili powder,
cumin, salt and pepper. Then I pour it over the chicken. I cook mine on high depending on what time I start it.
Then I shred the chicken into the crock-pot and mix it together. It is good either hot or cold. In the morning when I am putting on my husband salad before he goes to work, I sometimes want to eat it with a spoon, at 5:30 in the morning. I don't of course.

It is easy and it is a life saver. My kids put it on tortilla chips and eat it like nachos.

The recipe sounds delicious! You're funny...can't leave a recipe alone? I can't seem to stray from a printed recipe, even after all these years of cooking. You'd think I'd know how to improvise by now!

I had to look up the treasure hunt thing, but it sounds like great fun. Your recipe sounds like one of my favorites, except mine you wrap each chicken breast in foil with the corn, beans and salsa, then bake it. It'd be great for camping. :-)

I will be making this for sure. I have a few jars of my home made salsa from last summer and I know my kids will love it.

Too much of an adventure just before a wedding for me. I'd be worrying. I'd want everybody to stay put too because I wouldn't want anything to happen just before the wedding. Especially when greed and treasure is in the mix.

I hope that they have fun though. Guys will be guys.....

Oh I'm so glad you posted this recipe. I was going to make it today, and couldn't remember exactly what you said you put in the salsa and was going to text you! So funny you posted it.

I can't believe they are going to New Mexico... That's a little crazy. =\ I'm glad you got to keep your black eyed Susans. They are so pretty!

I hadn't heard about that treasure ... crazy that your boys are going to go try their hand at finding it. Of course, I can think of a lot worse things for them to do. ;-)

I just made this recipe last week-it is so...yummy!
Your flowers are pretty. I like back-eyed susans too, but they sure spread if you're not careful.
With all four of our children married, I've had to do a lot of tongue biting myself!
