Friday Ramblings


This morning it was wonderfully cool. The kind
of morning that I want to bake huge blueberry muffins
and make another pot of coffee and sit and watch
the clouds skitter across the sky and love the slow
days of June.
Only, that wasn't this day, yes, the cool part, but
nothing about it was slow and I had tons of work to
get finished.
I did want to make blueberry muffins. I need to go to
the store so I was out of flour, sugar and I didn't know
it yet when I started I was out of blueberries too.

I looked in my pantry to see if I could figure out how
to make blueberry muffins using a white cake mix.
I took a white cake mix and measured out the mix part
it came to 3 cups. I doubled the blueberry muffin recipe,
but added sour cream for the milk.
It looked and smelled wonderful, then I went to the freezer to
get my blueberries and no blueberries. I did get my freezer cleaned
in the process of trying to find them so that is a good thing.
I did have a bag of blackberries. So I changed my muffins
to a coffee cake recipe.
The above picture is the result. It is yummy.

Blackberry coffee cake
1 white cake mix
2 eggs
2/3 cup oil
2/3 cup sour cream
2 cups blackberries
topping
1 cube butter
1 cup brown sugar, packed
2 teaspoons of cinnamon

1. Preheat oven to 400 degrees. Grease 13x9 set aside
2. Combine the first 4 ingredients, mix well, when mixed
fold in blueberries and and pour in greased pan.
3. To make topping melt butter, add brown sugar and cinnamon and
sprinkle on the top of coffee cake.
4. Bake 38 minutes.
It was good and would work I think for a cobbler if the fruit was a little
more juicy.

Okay, switching gears. This morning I was standing looking out the window
the sun was coming up and I was watching the wind blow in the trees,
when I saw something run down the side of my yard to the front yard.
Standing looking around was a fox with a hurt leg. It wasn't aware of
me. I tried to get my camera but couldn't turn the silly thing on.
Foxes have really good ears because I think it heard me.
It went off through my neighbors front yard. This means
that the fox had been checking out my chicken pen.
I am glad I have a solid fence around my yard then two
more fences to get to my chickens.
It was pretty. I love the way they run. I just wish they
liked something besides chickens to eat.

when i was growing up, we picked black
berries. i was always afraid of snakes.

your poor fox, but you have to prioritize
those chickens, i guess. :)

Yum, that blackberry coffee cake looks really good. I'm glad your chickens were safe.

Wow, I love improv-cooking stories. And I wonder what had bit the fox? Remember how the cats were always getting bit by gophers? I'll bet it was something like that.
